Cortar todo en trozos grandes (no pelamos la zanahoria ni el jengibre) cortar la cebolla y vamos a aplastar levemente los ajos con la piel
- Poner todo en una olla (con el fuego apagado) salar la panceta, añadir la pimienta, la soja, el vermouth, el vinagre y el azúcar, encender el fuego, cuando empiece a cocer añadimos agua
- Nos tiene que quedar todo prácticamente cubierto de agua, dejar que empiece a cocer (fuego alto) tapar la olla y bajar el fuego (de los 9 números que tengo lo he puesto en el número 5) dejar cocer lentamente durante 1 hora y 45’ más o menos (dependiendo del grosor de la panceta) tenemos que ir moviendo la pantera de vez en cuando para que se ablande muy bien por todas partes.
- Tenemos que dejar que cueza muy despacio, hasta que la panceta esté muy blandita y nos quede muy poco caldo. Así nos tiene que quedar, dorada, con mucho brillo y poco caldo (el olor que tenemos en la cocina es maravilloso)
- Vamos a cortar un trozo para que vean cómo está por dentro.
